FULL DESCRIPTION
Considered the Dalmore’s flagship bottling by many in the industry, the 15 year old carries on from the 12 in its sherry finishing. This expression is aged for 12 years in ex-bourbon American oak and then finished for a further 3 years in a combination of ex-amoroso matusalem and apostoles sherry casks. This is a great malt to enjoy with a fat cigar and sophisticated conversation.

TASTING NOTES
Appearance: Dark mahogany.
Nose: Woody vanillas with dried spices and citrus.
Taste: Fruit leather, glace cherries and Christmas pudding.
Finish: Spiced mulled wine, orange and lingering tobacco.
Overall: The use of sherry butts continue to add length in the form of tannic leathers and dark red fruit notes in this otherwise fruity and spicy dram.

Unusually, rather than have their own sherry casks produced to specification, the Dalmore distillery favours ex-solera casks. These casks have been used to age sherry for decades, meaning the wood isn’t as active as a seasoned cask, meaning less of an oak influence during finishing.
