The First in the Dalmore’s Principle Range, the Dalmore 12 is a great example of a quintessential Highland malt. Spicy fruitcake notes are backed up by rich and indulgent flavours of chocolate and coffee. Aged for 9 years in ex-Bourbon American oak barrels, the liquid is then split, with one half remaining and the other half going into 30 year old ex-Gonzalez Byass Matusalem oloroso sherry butts.
TASTING NOTES
Appearance: Rich Mahogany.
Nose: Spicey, citrusy fruitcake and floral vanillas.
Taste: Dried fruit and candied nuts, hints of citrus.
Finish: Orange peel with hints of dark chocolate and bittersweet coffee.
Overall: The use of sherry butts adds length and depth to a very fruity Highland malt full of Christmas cake spice.

Unusually, rather than have their own sherry casks produced to specification, the Dalmore distillery favours ex-solera casks. These casks have been used to age sherry for decades, meaning the wood isn’t as active as a seasoned cask, meaning less of an oak influence during finishing.
