Hudson Baby Bourbon is the first legal aged grain spirit to be produced in New York since Prohibition ended over 75 years ago. Unusually for bourbon, Hudson’s spirit is manufactured in a pot still at the Tuthilltown Gristmill (a heritage site) and is aged in small new American oak casks.
TASTING NOTES
Appearance: Rich mahogany.
Nose: Plenty of sweet corn with hints of vanilla.
Taste: More corn, notes of oak and ginger spice.
Finish: A light finish of barrel spice and smoke.
Overall: Light bourbon reflective of its young age.

The foundation of Hudson Baby Bourbon is 100% Empire State Corn, sourced within ten miles of Tuthilltown Spirit Distillery. Once the local farmers harvest and dry the corn, it is ground, and then water is added so that the cooking of the mash for fermentation can begin. The Baby Bourbon is left to mature in signature small charred new American oak barrels, giving it a uniquely rich amber colour. These small barrels mean more wood contact in relation to the whiskey, which accounts for its rich, oaky, smoky flavour profile. The bourbon is never filtered, giving a full-flavour experience.
