The Macallan Rare Cask is comprised of only a handful of the distilleries finest first-fill sherry barrels, chosen for their colour and most importantly, depth of flavour. The barrels and wood selected for ageing the whisky at Macallan is such an integral part of the process that the distillery has bestowed their head cooper with the title ‘Master of Wood’.
TASTING NOTES
Appearance: Cassia bark.
Nose: Chocolate, vanilla and a hint of lemon peel.
Taste: Dates and raisins, milk chocolate with spicy ginger and cinnamon.
Finish: Clove and ginger give way to cocoa and oak.
Overall: Elegant malt full of rich, complex sherry character.

This is a very fine whisky, so it goes without saying that people who enjoy the finer things in life will appreciate this. Fans of Speyside scotch will want to try this, as Macallan have only used the créme de la créme of the industries sherry casks.

The Rare Cask bottling is a display of some of the finest and most exclusive casks the distillery has to offer. Because of the heavy distillate Macallan choose to select from their run, the casks used and the aging is very important to the final result. Macallan have become well known as experts in cask selection. No colour correction happens between batches of the Macallan so everything has to be done to make sure each new batch looks like the last.

ABOUT THE DISTILLERY
Macallan have invested 140 million pounds into their new distillery in Speyside, Scotland. Originally a small farm distillery producing malts for blends, the operation grew as and when it needed to, adding extra stills when demand for whisky grew. The new distillery boasts 36 stills. Macallan have become a collectors favourite, and with output aiming to be quadrupled over the next 25 years there is a lot more to come from them.
