FULL DESCRIPTION
Mount Gay is the product of 310 years of knowledge, experience and refinement. Mount Gay Black Barrel is the newest expression to join the distilleries portfolio. Created from a carefully selected blend of matured double pot distillates and aged column distillates, Black Barrel is aged in the standard charred ex-Bourbon barrels before being finished in barrels with a much deeper level of char. This process allows heavier spice notes to be released into the Rum.

TASTING NOTES
Appearance: Golden copper.
Nose: Charred oak, spices and hints of burnt orange peel.
Taste: Caramelised tropical fruits vanilla bean.
Finish: Lingering, rich, woody molasses.
Overall: Rich, yet well-balanced rum.

There are no real rules when it comes to rum production making it a very large and varied category. The process of making this spirit is a combination of fermentation and distillation.

ABOUT THE DISTILLERY
Mount Gay Distilleries takes the finest resources Barbados has to offer when producing their rum. Starting with sugarcane molasses, Barbadian sugar is amongst the finest in the world and so yields exception molasses. This is then combined with water which is drawn up through coral limestone from deep beneath the island, thus acting as a natural filter. The water is then filtered three more times before being added to the molasses and a proprietary yeast strain for fermentation, which occurs in open air vats with the aid of natural yeasts. Mount Gay Rums are double distilled in traditional copper pot stills before being matured in charred white American oak barrels previously used to hold American Whiskey. Finally, Master Blender Allen Smith painstakingly blends the rum to create the desired expression of Mount Gay Rum. An individual batch of Mount Gay Rum contains dozens of different distillates.

ABOUT THE LIQUID
With over 300 years of experience producing rum, Mount Gay Rums are the result of many generations of master distillers and master blenders evolving their methods and techniques to produce the finest rums from natural Barbadian ingredients. Mount Gay is the oldest existing rum brand in the world, dating back to 1703 when Sir John Gay took over management of a Barbadian distillery and began producing the rum that we know today.
