Method

Get a champagne flute or wine glass and chill by filling with ice or putting into the freezer.

Grab your Boston tin and, using a jigger or teaspoon to measure, pour the Bacardi Cuatro Añejo, lime juice, and honey into the tin.

Top your tin with cubed ice, seal your shaker securely, and then shake vigorously for 10-15 seconds, or until the tin is achingly cold.

Empty your champagne flute of ice, or remove from the freezer.

Double strain using a Hawthorne Strainer and Fine Strainer into your chilled Champagne flute or wine glass.

Top up the drink with some bubbles of your choice, and garnish with some pinched orange peel.

Serve and enjoy!

History

Bacardi’s UK Brand Ambassador, May Kongsrivilai, paid us a visit recently to show us all how to make one of her all-time favourites serves – the Air Mail. Check it out and try your hand at this deceptively simple recipe at home.

“This really is one of my refreshing favourites and really easy to make at home. So, first off, you’re going to need your ingredients: you have your Bacardi Cuatro Añejo Rum, your honey, your lime juice, and some oranges to garnish. First off, we want to grab the honey so I would maybe grab about two heaped teaspoons straight into your cocktail mixer. And then, if you just add around 15ml of fresh lime juice. Now, before I add the rum, you want to dissolve the honey and make sure it’s not gloopy. Give it a good mix.

Then you want to grab your rum. So, I’m going to be pouring out 35ml of Bacardi Cuatro Añejo rum, then I would add some ice. Give it a good shake. Then you grab your Champagne flute and double-strain, and you just want to top up with some bubbles. Peel your orange and you just want to give it a nice zest on top to get all of those aromas coming through, and that is your Air Mail.

Feel free to mix it up – you can use sugar syrup, you can use agave, and obviously you can play around with your Champagne or prosecco – but I’m sure you’ll absolutely love this.”
