Tommy’s Margarita

The Tommy’s Margarita is perhaps the most famous twist on the classic Tequila cocktail. Created by Julio Berjemo at his parents’ restaurant in San Francisco – Tommy’s, Julio replaced the traditional triple sec or orange liqueur of a classic Margarita with agave nectar, a syrup derived from the same plant that makes tequila.

Ingredients

50ml Blanco Tequila

20ml Agave Syrup

Juice of 1 Whole Lime

1 inch Chilli Chunk (optional)

2 Fresh Raspberries (optional)

Lime Wedge, Chilli Top or Raspberry for Garnish

Method

Using your jigger to measure, add your tequila and agave syrup to your Boston glass or shaker

Using your elbow press, squeeze the juice of 2 lime halves into your shaker

*To make a Picante Tommy’s, add a 1 inch chunk of fresh chilli to your shaker

*To make a Frambuesa Tommy’s, add 2 fresh raspberries to your shaker

Fill your shaker with cubed ice and seal

Shake vigorously for 10-15 seconds

Fill a rocks glass with cubed ice

Strain your cocktail into the glass

For a classic Tommy’s, garnish with a lime wedge, for Picante, garnish with a chilli top or for Frambuesa garnish with a fresh raspberry

Serve and enjoy

History

Bermejo’s version of the Margarita accentuates the agave flavours already present in the drink rather than highlighting the citrus flavours as you would with orange liqueur in a traditional marg.

Generally sweeter than a classic marg, the Tommy’s is traditionally served without a salt rim and is always served on the rocks, whereas a classic marg can be served either on the rocks or straight up. In 2008 the Tommy’s Margarita became the first venue-specific cocktail to be inducted into the International Bar Association’s manual.

We’ve chosen to make our version of this cocktail customisable. The Tommy’s makes a great cocktail to play with and personalise, with its simple sour-style base of strong tequila, sharp lime and sweet agave it lends itself perfectly to interpretation and modification. We offer our guests three options when making their Tommy’s – classic; with just tequila lime and agave, picante; with a chunk of chilli added to the shaker for an extra kick, or frambuesa; with an extra fruitiness and sharpness from a pair of fresh raspberries being added to the shaker. These simple alterations can completely transform the profile of the cocktail without losing the balance that makes it so popular and successful.
