The Paper Plane is a modern Classic and an industry favourite created in 2008, It’s a carefully balanced sour featuring bourbon Italian aperitivo, amaro and lemon juice in equal parts. For this alcohol-free version we’ve replaced bourbon with Lyre’s American Malt, aperitivo with Lyre’s Italian Spritz and amaro with Lyre’s Italian Orange.

Ingredients

20ml Lyre’s American Malt

20ml Lyre’s Italian Spritz

20ml Lyre’s Italian Orange

½ Lemon, squeezed

Paper Aeroplane & Peg or Lemon Twist Garnish

Method

Chill a martini glass or coupette in the freezer or by filling it with ice.

Using your jigger to measure, add your American Malt, Italian Spritz and Italian Orange to your Boston glass or shaker

Squeeze the juice of half a lemon Into the shaker

Fill your shaker with cubed ice and seal

Shake vigorously for 10-15 seconds

Remove your glass from the freezer or empty it of ice

Double strain your cocktail into your chilled martini glass or coupette

Garnish with a mini paper plane pegged to the glass or a lemon twist

Serve and enjoy!

History

The Paper Plane was created in 2007 by the team behind former World’s Best Bar, Milk & Honey for the opening of their former colleagues’ new Chicago bar, The Violet Hour.

The drink is a riff on a Last Word which itself is a riff on a Corpse Reviver No.2, each of these cocktails is composed of four ingredients in equal measure–a base spirit, two modifying liqueurs and a citrus juice. The Paper Plane is named after MIA’s 2007 single Paper Planes which was a guilty pleasure of the creators’.

Our version replaces the usual ingredients with non-alcoholic alternatives that have a similar dryness and complexity to the classic liquors making for a non-alcoholic Paper Plane that is strikingly close to the original.
