Mister Nephews Daiquiri
A classic dry, sour, citrusy Daiquiri with an extra layer of richness from dark rum, and a hit of dryness thanks to a splash of Maraschino liqueur.

5ml Maraschino Liqueur
12.5ml Sugar Syrup
25ml Lime Juice

Method
Chill a martini glass/coupette in the freezer or fill it with ice.
Take your Boston glass or small tin and, using your jigger to measure, add the rum and sugar syrup to the shaker.
Using your bar spoon (5ml) to measure, add the Maraschino to the shaker.
Using your Mexican elbow and a jigger to measure, squeeze 25ml of lime juice and add it to the shaker.
Fill your shaker with cubed ice and seal using your Boston tin or lid, before shaking vigorously for 10-15 seconds or until your tin is very cold.
Remove your glass from the freezer or empty it of ice if necessary.
Using your Hawthorne strainer and your fine strainer, double strain your cocktail into your chilled martini glass or coupette.
Garnish with a lime wheel, cut to balance on the edge of the glass.
Serve and enjoy!
History
This is a twist on the original Daiquiri, using dark rum and adding a dash of Maraschino Liqueur. The aged rum rounds the drink out whilst he liquor adds some extra dryness and mouthfeel.
The Wray and Nephew brand is now most associated with their infamous overproof rum, However for many years Wray and Nephew operated as a complete rum distillery and plantation producing a range of different rums. This cocktail was originally designed for their fifteen year special reserve, however as its popularity grew, stocks of this special blend quickly depleted.
