Fix Up Look Sharp

Fix Up Look Sharp is an original drink created for our Cellar Bar menu entitled ‘50 Years of Hip Hop’, paying homage to half a century of this iconic genre. This drink was inspired by the classic Dizzee Rascal track from his Mercury Prize winning 2003 album Boy in da Corner. Inspired by the quintessentially London sound of Dizzee’s music and with a sharp flavour profile to match the track, Fix Up Look Sharp is an elegant, citrusy Collins that can be made with or without booze without compromising on flavour. This drink is made with London Dry Gin OR Lyre’s Dry London Alcohol-Free Spirit, mixed with lemon juice, handmade Oleo Saccharum and Plum Bitters topped with London Essence Roasted Pineapple Soda.

50ml London Dry Gin OR Lyre’s Dry London

25ml Lemon Juice

10ml Oleo Saccharum

3 Dashes Plum Bitters

Top w/ London Essence Roasted Pineapple Soda

Dehydrated Lemon Wheel for Garnish

Method

Using your jigger to measure, add the gin OR alcohol free spirit, oleo saccharum and lemon juice to your Boston tin or shaker

Fill with cubed ice and seal

Shake vigorously for 10-15 seconds

Strain into a highball filled with cubed ice

Top with London Essence Roasted Pineapple Soda

Garnish with a dehydrated lemon wheel

Serve and enjoy!

History

Dizzee Rascal has firmly cemented himself as not only one of the godfathers of grime (shout out Wiley), but also the man perhaps most responsible for bringing this distinctly British Hip Hop subgenre to the forefront. We couldn’t do a Hip Hop menu without showing at least a little love to the UK and this is a track and album, loved by everyone here at TT.

This drink takes its cues from a classic Tom Collins, the century-old gin drink made from gin, lemon, simple syrup and soda. We’;ve given the original a signature TT twist by swapping simple syrup for handmade Oleo Saccharum–a tangy syrup made by macerating citrus peels in sugar–and replacing plain soda water with London Essence’s Roasted Pineapple Soda, both to add a more complex and fruity flavour profile and to give the drink the distinct yellow hue synonymous with Dizze’s album cover. We wanted this one to be enjoyed by everyone so we’ve designed it to work just as well with or without booze. For a full strength version, use your favourite London Dry Gin, or for an alcohol free option you can substitute gin for the delicious Dry London Spirit, from Lyre’s Alcohol-Free Spirits.
